Dark Choc & Salted Caramel Spooky Cookies

Ingredients Required (This recipe makes 6-7 medium cookies):

  • 1 scoop (30g) of Smart Protein Salted Caramel
  • 1 avocado
  • 1 egg
  • 1 tbsp of Vanilla Extract
  • 3 tbsp of Syrup of your choice (I used sweet freedom fruit syrup)
  • half a Cup of Oats (blended to make oat flour)
  • 1 tsp of Baking Powder
  • 2 handfuls dark choc chips
  • half a cup of cacao or coco powder
  • edible candy eyeballs ( Sainsburys)
  • 150ml soya milk ( any milk will do the trick!)
  • How To Make It:

    1. Preheat the oven to 200 degrees and line a tray with parchment paper
    2. In a blender mix the egg, avocado, vanilla extract and syrup
    3. Grab a bowl and add all dry ingredients then mix in the wet ingredients
    4. Add the dark choc chips followed by the milk
    5. Mix all well and begin to spoon into small cookie dough shapes on the parchment paper allowing space in between as cookies will expand, flatten a little!
    Then cook for approx 6 mins – take out of the oven and add the candy eyeballs into your cookies then return to oven for a further 6 mins = 12-15 mins in total (don’t worry if the eyeballs burn a little as they aren’t meant to be perfect it’s Halloween!)
