RecipesLemon & Raspberry Protein Pancakes Written by PhD Nutrition12th June 2025 Prep Time & Cooking Time: 15 mins Serves 6 small-medium slices Ingredients Required: 1 scoop Smart Protein™ Lemon Drizzle 50g of organic oats 2 mashed bananas 1 egg 100ml unsweetened almond milk 1 tbsp vanilla extract 50g frozen raspberries 1 tbsp chia seeds 1 tbsp baking powder How to make it: 1. Blend the oats in a blender to make oat flour then add to a mixing jug. 2. Add baking powder, PhD Smart Protein powder, and vanilla extract and mix thoroughly. 3. Add the mashed banana and then incorporate the egg mix well and finally add 100ml of unsweetened almond milk. Adjust the pancake mixture accordingly. If it’s too dry add a little more milk, if too wet add more oats. 4. Preheat a pan with a small tsp of oil and wait until pan is hot. 5. Spoon your pancake mixture in the pan to make 3 equal pancakes and throw a few frozen raspberries onto the top of each pancake – they will cook fast so turn them after a minute until brown on both sides and cooked 6. Serve warm and top with 1-2 tbsp of Greek yoghurt, the remaining frozen raspberries and chia seeds!
