Oven-Baked Cod with Mixed Bean Salad, Summer Vegetables and Wholegrain Quinoa Rice

Ingredients required (based on 1 serving):

  • 100g fillet of fresh cod
  • half a packet of Uncle Bens wholegrain & quinoa rice (110g)
  • 105g Mixed bean salad
  • 100g Summer vegetables
  • 1 tbsp chilli flakes
  • 1 tbsp mixed herbs

 

How to make it:

1. Preheat oven to 180 degrees, place the cod covered in foil into a baking tray and bake for 20 minutes.
2. Boil vegetables in a pan for 8-10 minutes.
3. Pop the rice into the microwave for 2 minutes then pour half onto a plate.
4. Open the mixed beans and carefully place on top of rice.
5. Add the freshly cooked summer vegetables once cooked.
6. Finally, once cooked add the oven cooked cod on top and add chilli flakes and mixed herbs to finish!
