Steak & Mushroom Stroganoff

Prep Time & Cooking Time:

30-35 mins

Ingredients required:

  • 1 thin cut sirloin steak
  • 1 handful of medium-sized mushrooms cut up into segments
  • 100g of sour cream
  • 3 tbsp of Worcester sauce
  • 1 serving of brown rice
  • 1 tbsp of cornflour
  • 2 tbsp of paprika
  • 2 tbsp of cracked black pepper

Step by Step Instructions:

1. Begin by cooking your rice in a saucepan filled with water to cover for around 15-20 minutes on a medium heat and leave to cook.
2. Prepare your steak by finely cutting into strips and cutting the mushrooms into segments. Grab a pan, pour a little oil in and preheat on a medium heat – add the steak first and cook for a few minutes then add the mushrooms. Cook for approx. 8-10 minutes.
3. Add the sour cream to a small jug and mix with 1 tbsp of cornflour (to thicken the sauce up), then add the Worcester sauce, paprika and black pepper. Mix all together and then slowly pour into the pan and mix through the steak and mushrooms and keep stirring.
4. By this point the rice should be cooked so drain the rice in colander and set aside on a prepared plate. Once the sauce has warmed over the steak and mushroom, turn off heat and pour your steak and mushroom stroganoff over the rice – add more paprika and black pepper as desired to finish!
