Turkey & Pea Pesto Pasta

Ingredients Required:

  • 75g wholewheat pasta
  • 3 tbsp pesto
  • 2 tbsp soured cream
  • 1 turkey breast (cut into chunks)
  • 1 garlic clove (crushed or garlic granules will do)
  • 1/2 cup of frozen peas
  • 1 handful of frozen green beans
  • Parmesan & pumpkin seeds (to top the dish at the end)

 

How to make it:

1. You will need 3 pans all together: 1 frying pan and 2 saucepans in order for the timing of this meal to fall into place accurately. Pour a little oil into the frying pan and fry the diced turkey. Whilst cooking, preheat a saucepan filled with water and cook the pasta (approx. 15 minutes). Whilst this is cooking get the remaining saucepan ready with water on the hob to cook with frozen greens.
2. Once the turkey has browned, set aside. Pop the green peas and beans into the remaining prepared saucepan and cook for around 5-8 minutes (be careful not to over-cook). The pasta should be ready by this point – drain the water from the pan and then pop the pasta back into the saucepan. Drain the water from the peas and green beans once simmered for 5-6 minutes and set aside.
3. Add the turkey, peas, green beans and garlic to the pasta and mix well. Finally add the pesto, soured cream and mix thoroughly whist on the hob on a low heat to ensure the sauce and pasta itself is nice and warm.
4. Remove from the hob, turn off the heat and spoon onto a prepared plate. Top with a sprinkle of parmesan and pumpkin seeds.
