There’s nothing like a Cinnamon Roll and a cuppa right?! Well, these Vegan cinnamon rolls are the perfect addition to your 3 pm cuppa. Easy on your macros and super tasty – what are you waiting for?
120g self-raising flour
1 tsp baking soda
220g soy yoghurt
30g vegan butter
30g light muscavado sugar
1 tbsp cinnamon
20g icing sugar mixed with 1 tsp water
Handful chopped pecans
Preheat oven to 180°c and line a small baking tray with parchment.
In a bowl, mix together the flour, protein powder, baking soda and yoghurt until a rough dough forms. Use your hands to knead for a couple of minutes until smooth.
Melt the butter, then add the sugar and cinnamon and mix together.
Lightly dust a large sheet of parchment with some flour and roll the dough into a large rectangle about 0.5cm thick.
Spoon the butter mixture onto the dough and spread to cover it.
Roll the longest side of the dough tightly inwards to form a sausage shape, then cut into 8 rounds.
Place the rounds face up onto the prepared baking tray, ensuring they are slightly spaced out.
Bake for 15-17 minutes until risen and golden. Allow to cool for a couple of minutes before drizzle with icing sugar and sprinkling over the chopped pecans.
Serves 8 – Ready in 30 minutes
