Veggie Chilli

Serves 2 people.

Prep Time & Cooking Time:
35 minutes in total.

Ingredients Required:
300g frozen Quorn mince
400g can of chopped tomatoes
400g can of kidney beans
1 tin of baked beans
1 red chilli
1/2 onion
1 packet of microwave brown rice & quinoa (we used Uncle Ben’s)

Step by Step Instructions:
1. Chop the fresh red chilli and onion and set aside. Preheat a large pan with a little oil and cook the Quorn mince for about 5 minutes. Lower the heat slightly, add the onion and red chilli and stir well.
2. Add the tomatoes, kidney beans and baked beans and mix well until all cooked nicely together.
3. Warm the rice up in the microwave and serve equally onto 2 plates – top with your freshly cooked chilli. Season with salt and pepper.
