Blackberry & Chocolate Mousse

BLACKBERRY & CHOCOLATE MOUSSE

Ingredients

30g Smart Protein Chocolate Brownie
3 tbsp unsweetened almond milk
80g Greek yogurt 0%
50g dark chocolate 70%
2 egg whites
160g blackberries
1 tbsp maple syrup
1 tsp cornflour

How to make

1. Add the blackberries to a saucepan with a splash of water (save 4-5 blackberries for decoration). Place the saucepan on a medium heat and cook the berries for 5 minutes until soft, add the maple syrup and cornflour and stir through until it is thick and jammy. Spoon into a bowl and place in the fridge to cool.

2. Add the dark chocolate to a microwave safe bowl and carefully melt in the microwave, set aside to cool slightly.

3. Next, combine the chocolate brownie Smart Protein, milk and yogurt in a large bowl and beat until smooth, then add the cooled melted chocolate and stir through. If the mixture becomes really stiff, you can place the bowl in the microwave for 10-15 seconds and the mixture will loosen up.

4. Add the egg whites to a bowl and whisk until stiff peaks form. Add the whipped egg whites to the chocolate mixture and carefully fold together, being careful not to knock any air out.

5. Place the mousse in the fridge for at least four hours to set.

6. Once the mousse is set, serve each with a spoonful of blackberry compote and a couple of fresh blackberries. Your Blackberry & Chocolate Protein Mousse is ready to be served.
