Try the recipe for delicious and gooey chocolate cupcakes. Ingredients 1/3 cup oat flour 2 eggs 1 scoop Diet Whey white chocolate 3 tbsp cacao powder 1 tsp baking powder 1/3 cup non-dairy butter (or low fat spread) 1/2 cup coconut sugar pinch salt 1 tsp ground cinnamon a few drops of black food colouring Optional: dark chocolate Frosting 1 tbsp cacao powder 2 tbsp honey 2 tbsp Smart Nut Butter white chocolate blondie Water as needed a few drops of black food colouring How to make 1. Preheat your oven to 180c and line a cupcake tray with 7 cup cake cases. 2. In a mixing bowl, cream together the butter and coconut sugar until light and fluffy then beat in the eggs one at a time. 3. Fold through the dry ingredients until well combined and you’re left with a smooth batter. 4. Add in the food colouring and mix well. 5. Divide the mixture amongst your cupcake cases and pop a square of chocolate into each if you desire. 6. Bake these in the oven for around 15 minutes, until cooked through, then remove and allow to cool. 7. Meanwhile, for the frosting: mix together the Smart Nut Butter, cacao, honey and protein, then drizzle in water a little at a time so that you’ve left with a smooth, creamy frosting. 8. Once the cupcakes have cooled, pipe or spread the frosting onto each of them and top with fresh blackberries or extra chocolate.
