Ready in just 30 minutes these easy cookies are the perfect protein hit for the afternoon cuppa this spooky season. Who said Halloween has to be all chocolate and candy? Ingredients 190g smooth peanut butter, natural 15g coconut oil, melted 50g light mucovado sugar 1 tsp vanilla extract 2 large eggs Pinch of salt 40g 100% whey, Belgian chocolate flavour 20g cocoa powder To decorate- 90g icing sugar 2 tbsp water Edible eyes Servings Serves 10 Ready in 30 minutes How to make Preheat oven to 180°c and line a large baking tray with parchment. To a bowl,add the peanut butter, coconut oil and sugar and beat until really well combined. Crack in the eggs, and pour in the vanilla extract, beat again until thoroughly combined. Add the salt, protein powder and cocoa powder, fold together until a thick cookie dough forms. Roll into 10 even-sized balls and place spaced out onto the baking tray, flatten each ball into a disc shape. Bake for 10 minutes. Allow to cool fully before decorating. To decorate, mix together the icing sugar and water until a thick paste forms (add a little extra icing sugar if too runny). Spoon into a piping bag or sandwich bag with the end snipped off and draw lines over the biscuits to create a bandage effect. Finally, add 2 eyes to each biscuit.
